Joey's Holiday Fruit Medley
"This breakfast dessert, which is what I call it because it has gotten me through several unexpectedly very rough mornings, consists of the following ingredients: apples, pears, raisins, dark brown sugar, pure vanilla cane syrup, molasses, cinnamon, nutmeg, sea salt, fresh oats, butter and cran-apple juice."

What you'll need:
a 4-qt mixing pan for the apples, a 2-qt mixing pan for the syrups, a 4-qt crock pot or 4-qt sauce pan to stew with, 1 large wooden spoon.
- 2lbs apples (seasonal variety)
- 2 medium pears (seasonal hard)
- 1 cup dark brown sugar
- 1/4 cup pure vanilla cane syrup
- 1/4 cup molasses
- 1/8 stick of butter (optional)
- 2 tblsp. Cinnamon
- 1 tspn. Sea Salt
- 1 tspn. Nutmeg
- 1 1/2 cups fresh oats (can add a mix of vegetable protein and other flake grains for texture and consistency)
- Splash of hot water
- 1 1/2 cups cran-apple juice
- Whip Cream
- Shredded chocolate
Peel, dice and clean the apples and pears. Mix raisins in. An iPod or MPeg with your favorite music will get you through this step.
Rinse fruit and place into 4-qt mixing pan. Mix fruits together and set aside.
Melt and stir the molasses and cane syrup together using a splash of hot water. Douse the fruit medley with the liquids and stir.
Add the Dark Brown sugar into the 2qt mixing pan.
Use a splash of hot water to melt the sugar into a liquid.
Sprinkle cinnamon, nutmeg, & sea salt over the fruit medley. Stir with a large spoon.
Stir in 1 cup of fresh oats. Set aside.
In sauce pan or crock melt butter. Add Dark brown sugar. Stir over high heat until it begins to caramelize. When you see it froth...
Stir in the fruit medley until the carmelized sugar and butter are absorbed.
Add the cran-apple juice. Stir. High heat until it comes to a rapid boil. Mix continually.
Add 1/2 cup of fresh oats and stir in well. Bring to a rapid boil.
Turn the heat down to low and let simmer for 30 minutes stirring frequently.
Serve cool or warm.
Finish by adding a portion of fruit medley in a dessert dish, top with a dollop of whip cream and add a sprinkle of shredded dark chocolate.
Next morning serve up a portion for breakfast, but leave out the whip cream and chocolate, and add a little milk. Then toss into the microwave for 1 minute.
